You can grill any type of vegetables, but below are some of my very favorite! Although I did not include olive oil in the photo above, I generally toss or brush the vegetables with oil prior to grilling. Recipe ingredients Great vegetables for grilling: Bell peppers, carrots, corn, eggplant, onion, poblano peppers, portobello mushrooms, shishito peppers and zucchini. Use low carb, low FODMAP and paleo-friendly vegetables to accommodate those diets.
